Vegan Banana Pancakes recipe

Hey there!

So last Sunday I made my own recipe of vegan banana pancakes- here it is:

Ingredients for 3-4 portions:

2-3 ripe bananas

1 cup of whole wheat flour or buckwheat flour as a gluten-free option

2 flax eggs
3/4 cup plant milk (I used hemp milk, you can sub for soy or almond as well)
2 tbsp brown sugar

1 tsp baking powder

1/2 tsp salt
1 tsp cinnamon
other spices of your choice

  1. Start by making your flax eggs: 2 tbsp ground flax seed mixed with 6 tbsp of water, refrigerate for 10-15 min
  2. Mash bananas, add plant milk
  3. Combine all dry ingredients
  4. Add your dry ingredients with wet ingredients, including the flax eggs
  5. Heat up your pan and sprinkle some coconut oil over it, poor in your batter and fry for 1-2 min on each side

You can serve your pancakes with maple syrup and fruits
