Vegan Blueberry Pancakes Recipe

Hey there!

My second vegan pancake creation has arrived!!!

Here’s the recipe. Ingredients for 2-3 portions:

1 cup cubed melon or 1 ripe banana
1 flax egg
1 cup plant milk (I used hemp milk, you can sub for soy or almond as well)
1 tbsp of coconut oil

1 cup of whole wheat flour or buckwheat flour as a gluten-free option
2 tbsp brown sugar
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
other spices of your choice

1 cup of fresh blueberries

  1. Start by making your flax egg: 1 tbsp ground flax seed mixed with 3 tbsp of water, refrigerate for 10-15 min
  2. In blender combine melon/banana with milk
  3. Mix all dry ingredients
  4. Add wet ingredients (milk+ flax egg+ coconut oil) to dry ingredients
  5. Carefully stir in your blueberries – your batter is ready!
  6. Heat up your pan and sprinkle some coconut oil over it, poor in your batter and fry for 1-2 min on each side

You can serve your pancakes with maple syrup or honey – they are not too sweet by themselves, so I advise you use some sort of sweet dressing 🙂
